Paleo at it's most true and raw form essentially means "if you can't kill it or pick it, don't eat it". Which means you wouldn't have seen caveman around the fire getting making some delicious baked goods. So that's why these aren't called "Paleo" cookies. But if you're looking for a good variety day recipe or if you have lil kettlebellers running around this is a great natural alternative to the typical sugar laden processed chocolate chip cookie.
WHAT YOU NEED:
1/2 cup coconut flour
1 teaspoon baking soda
1/2 cup coconut oil, melted
2 eggs
1 cup blonde coconut palm sugar
1/2 teaspoon salt
1 1/2 teaspoons vanilla
1 cup of 60% cacao bittersweet chocolate
1 cup chopped walnuts(optional)
WHAT TO DO:
Mix flour and baking soda and set aside.
Mix oil, eggs, sugar, salt and vanilla.
Combine flour and soda and mix all together.
Fold in chocolate chips.
Form desired size and shape.
They do not expand while baking.
Bake at 350 for 13 minutes.
